Just a food photo: Lacy Coconut Crepes with Rum-macerated Grapes

We always have pancakes or crepes on weekend mornings. This Saturday morning we realised we were out of milk. Luckily K. found some coconut milk in the fridge, and made us these beautiful lacy coconut pancakes that we enjoyed with grapes that had been macerated in some dark rum..

Not giving a recipe (just drizzle your usual pancake/crepe batter on the pan), but I really liked the photo :)

  4. what a good idea, I´d never have thought of using coconut milk. it´d have had to be waiting, hungry and annoyed, for the corner shop to open for us. much better your way.

  5. Tanna – they are lovely, aren’t they? As for recipe, your favourite (thin) pancake/crepe recipe should do – just drizzle it on a hot skillet!

Shaun – well, this foodblogging is about sharing our food moments, isn’t it?

Lobstersquad – I’ve made coconut pancakes before, as there are no shops within walking distance. I’ve also replaced normal milk with coconut milk in apple cakes on a few occasions – also works well!

    Wendy, K&S, - thank you!
