Wow- I just happened to look at the old Daring Bakers site and the word Estonian jumped out at me. I am amazed. I lived in Tallinn for 4 months and Tartu for a year back in 1999-2000 and fell in love with it. The rhubarb cake made me laugh because we were fed that all the time. Anyway, glad I found your blog. It is amazing.
I was just writing about how great a combination fruit and cheese are - but never would have thought of this one. I'm so glad you dreamed it up, so I have another fruit and cheese combo to add to my collection. Mint is the perfect finishing touch.
