Oven-baked toffee apples (from the recipe archives)
September 2010
This recipe was originally posted in September 2008, but it's still a big favourite with our friends and family, so I decided to showcase this again. It's a wonderful twist on the traditional oven-baked apples, that should appeal to everybody with a sweet tooth.
Oven-baked Toffee Apples
(Ahjus küpsetatud õunad mandli-iirisekattega)
Serves 4 to 6
September 2008
4 to 6 large firm apples
Toffee-almond topping:
50 g almond slices
50 g unsalted butter
200 ml soft brown sugar
200 ml whipping or double cream
1 Tbsp potato starch or cornflour
To serve:
vanilla ice cream
Peel the apples (NB! this is optional, see comment below*), halve and core them. Fit them snugly into a buttered oven-dish, cut-side down.
Mix brown sugar and potato flour/cornflour in a small saucepan. Add butter, almond slices, and fresh cream. Bring slowly into the boil, stirring regularly. Spoon the toffee mixture onto the apples.
Bake in the middle of a pre-heated 200 C / 400 F oven for 20-30 minutes (cooking time depends on the apples), until apples are cooked and toffee topping has thickened. KEEP YOUR EYES ON THE PUDDING and take care not to burn the toffee sauce!!!
Cool a little and serve with ice cream or soft whipped cream.
* In general, I tend not to peel apples from my mum's or grandma's garden, or apples from a reputable organic source. However, peeling apples beforehand does make for neater presentation and easier eating afterwards.
This recipe was also included in my first cookbook, Nami-Nami kokaraamat ("Nami-Nami Cookbook"), published in Estonian in December 2010.

this is going to be worth gold! soeren loves apples and now as they come into theri full glory i have begun to collect a few recipes! pille you always save my weekends!
Gorgeous! I don't peel apples either, so much of the flavor is in the skins.
see tundub nii isuäratav, et kindlasti proovin nädalavahetusel järgi! meil on paras õunteuputus sellel aastal :)
suu hakkab lihtsalt vett jooksma!!
I'm off to make this right now. As in, right this instant. Thanks!
Pille,
Thanks for visiting my blog. Yours is great! I am making this dish for dessert tonight. It looks so easy and delicious. Thanks for the recipe!
I love baked apples and these sound delicious. Is there anything you would suggest instead of the potato flour?
I haven't gotten into apples yet this season - I think I'll use this recipe to start it all off. Thanks!
THis certainly appeals to my sweet tooth, looks great!
i dont know why when i saw the photo i just thought of snow white! these look fantastic and so delicious. i reckon i'd be on a sugar high for days frmo just one apple :) heaven!
Ooh, that's definitely right up my alley!
this sounds absolutely amazing! what a perfect way to welcome to beginning of fall :)
Oh, yum!

Gosh, that looks delicious -- and a bit like a lunar landscape! I never peel apples -- I love the tartness of the skin, and when I make applesauce, the skin turns the sauce a beautiful pink.
ma ei teinud seda magustoitu mitte üks vaid lausa kaks korda sellel nädalavahetusel! see on üks parimaid õunatoite, mida ma elus söönud olen! suur tänu!
this is perfect... i have the fridge full of apples at the moment, ans the trees in the garden are still carrying more! i don't know what to do with all these apples anymore - there are not enough hours in the day to eat them all! although i am known never to resist anything with toffee!
Pille, that is such a golden color! I want some, please, with a splash of yogurt!
I'm not big on desserts but this does look amazing!
What a stunning dessert! Golden apples with luscious toffee...so simple and luxurious at the same time :)
Looks good, though what we have in abundance right now is guavas. Think I'm going to try your recipe with them & will let you know how it turns out. I've already made my quota of guava jam, wine and catsup (in process).
Wow, these look beautiful. Just beautiful.
Pille- those look absolutely divine. Almost like a tarte tatin without the dough. I will certainly be trying this recipe very soon.
Oh how wonderful!! I always used to love toffee apples as a kid, but they tend to be so messy to make. This is the ideal no mess, no fuss alternative - and none of that garish red colouring ;-)
May be a dumb question, but what temp should you have the oven on?
Wow! Just WOW!
that looks really delicious!
These look like a real treat!
apple-licious!
