Rose cake
Made this rose cake - my first ever - for our daughter's fourth birthday party last Saturday. I had come across these rose cakes on Pinterest on several occasion (see here or here) and really wanted to make one myself. I found piping the roses surprisingly easy and will happily undertake the process again.
A simple sponge cake (using 4 eggs), layered with lingonberry and apple jam as well as lemon-flavoured curd cheese cream, and topped with cranberry zefir (basically a type of Italian meringue; 3 egg whites and 300 g sugar is enough to frost the 26 cm cake).

This cake is gorgeous Pille!! I baked the cake for my daughter's 1st birthday and it was nowhere near as elegant as this!
Great looking cake, very girly (not that that stops me hankering after a slice!). Cant believe she is 4 already!

What is cranberry zefir?

Anon. - zefir is a type of Italian meringue that's popular over here, but it's uncooked. Instead on simple sugar syrup, you use something flavoured - either lemon juice or water with lemon acid, or cranberry juice, to make the syrup. A cranberry juice flavoured zefir is cranberry zefir :)
I love meringues...so I HAVE TO DO THIS ONE
