Just a food photo: Beetroot and blue cheese salad



Roasted sliced beetroot, crumbled Finnish Aura blue cheese, (a drizzle of good olive oil, perhaps) and some thyme. Mmmmm...

That is a combination I would never have thought of. I love beetroot and I love blue cheese so it has to be good.

Your post made me remember that I have beetroot in the fridge. I am off to cook them now. No blue cheese unfortunately, but I will find something. Love the simplicity of your recipe.

Maninas: food matters – they are gorgeous, aren’t they? I used long thin beetroots, so it was quite easy to slice them thinly..

Farmer de Ville – well, if you’ve got a good blue cheese, and a lovely roasted beetroot, then there’s not much more to wish for!
